Confessions of a Health Nut

I have to confess, I am a pretty big perfectionist when it comes to eating healthy. Yes, I check every ingredient and will drop a package in a second if it has something I don’t approve of on the label. I am pretty disciplined.

However, and this is a big however, I honestly believe in an 80/20 lifestyle. 80% healthy food and 20% what ever you want. Unless some one is on a healing diet I think an occasional treat works well.

A few weeks ago I was at my granddaughter Joy’s birthday party in her school and she so much wanted me to have a piece of her Carvel birthday cake, (which I have to say does not tempt me one bit, because I know the ingredients).

But when that gorgeous little face with the curly brown halo of curls, and the big brown eyes looks up at you and says “Grandma have some cake”…..well, you get the picture. So I took a small piece and ate it with a lot of relish, and absolutely no guilt I might add. I think sometimes participating in the happiness of someone you love is more important than anything.

My son felt compelled to catch that little event on video for proof to show his siblings. They all started reminiscing…
-“Remember when Mommy ate a hot dog that time?”
-”I remember when she ate Hagen Daaz once!”
-“Oh yeah, and when we were vegan and she got us all steaks!!”
Then my husband chimed in;
-“We ate ice cream on vacation last year!”
-“We once shared a chocolate bar in Turks and Caicos!”

Okay, okay I know, I’m not uber fun in the food department! So the point is that most of my “treats” are healthy treats, with good quality wholesome ingredients that don’t make the above shock list. Like the Coconut Honey Candy . I count those as my 20% treats. But occasionally it’s good to let go and have something super off. It just makes life more interesting.

The most important part is enjoying it and feeling no guilt. Guilt creates a cortisol response and is anxiety provoking, which is unhealthy to say the least. Give yourself permission and fully enjoy. If it’s not a regular thing and most of your food is healthy, go for it!

This Thanksgiving, eat a healthy protein rich meal of turkey and vegetables, 80% worth, and then choose a really good 20% treat. Enjoy, be grateful, be happy. Guiltless!!

A Very Personal Story

Waaaa, waaa, waaa” said the baby. Cute, you think? I don’t think my mom thought so. I did not sleep through the night for a full year after I was born. So… neither did my mom.

 

I had severe stomach pain that was not just “colic”.   I was diagnosed with Celiac Disease. As my mom told me, she took me to a doctor in New York City who specialized in gastro-pediatrics. I don’t know how she found him, but leave it to my mother to find the best.  I do remember his wood paneled office and his big desk that I could barely see over.

 

Back in the day, doctors didn’t only use pharmaceuticals. They healed people. They used nutrition.  This wonderful doctor put me on a Specific Carbohydrate Diet or the SCD for short. It is basically a diet that omits any type of grains, beans, and legumes, and is mostly made up of animal protein, vegetables and some fruits.  My mom thankfully, strictly adhered to the diet.  I was kept on it until I was four years old.

For me, it wasn’t so bad. I actually felt special.  My mom made me special meals, and frozen juice pops to eat when those ice-cream truck bells began to ring. I had never tasted sugar so I had no idea what the fuss was about.

 

At age 4 I was pronounced, “healed” and I was back to a regular diet that I was then able to tolerate.  In a family that had our share of learning disabilities, I had none. In fact I was always an honor student. What does that have to do with anything, you ask?  Read on…

 

Years later as my interest in nutrition became strong; I thanked God that I was spared from 4 years of eating sugar, but I questioned the diagnosis I was given for Celiac. Everything I read assured me that Celiac was incurable.  I recently discovered I was wrong as could be! It was curable, and I was cured!

I have come to believe, very strongly I might add, that everything can be cured with food and other natural modalities.  I have seen it all.  Proper nutrition can do miracles and more.

With a lot of experience and all my studies, I came up with a very specific diet that was truly healing a lot of my clients.  It helped people who suffered from constipation as well as others who had stomach issues and severe depression. I developed it by focusing on controlling insulin levels and getting a good ecology going in the digestive tract with the very best quality foods. Yessiree I was on to something good!

It was then that I started connecting the dots. If I had not been on that SCD diet when I was a baby, would I have learning disabilities? What else did it save me from?

 

I happened to have a copy of Dr. Natasha Campbell-McBrides’ book “Natural Treatment for Gut and Psychology Syndrome” (GAPS) that I just received from Amazon. It was sitting on my coffee table just waiting to be read!

The GAPS Diet, based on the SCD, is the one people are using to cure all psychological problems: Autism, Dyspraxia, ADD, Dyslexia, ADHD, Depression, Bi-polar, Schizophrenia, and more. The research and studies that are highlighted in the book, show a very distinct connection to all those problems with the condition of the digestive tract. It is truly amazing!!

 

Ready for the clincher? The Doctor who cured me, Dr. Sidney V. Haas, was the inventor of the original diet, the SCD!  I discovered this at 11:30 at night when my whole household was asleep.  I did a low squeal as I flipped-out from the news in the GAPS book!

Dr. Haas developed this revolutionary approach in 1951, and cured me in the early 60’s. All later variations such as the GAPS Diet, are based on his work. I had no idea he was “the man”.

Well that is the craziest, most destined thing I ever saw!  He cured me, got my gut and brain working, and now I hope to carry on doing his work?  Mind blower don’t you think?

And so it goes. I am dedicating my life to helping people heal their guts and minds in the way mine were healed; in a natural, painless, healthy way. I have so much gratitude to God, my mother, and Dr. Haas for healing my body and mind, what better way to show it?

How do people become self-intoxicated?  Alcoholism has a serious connection to gut and psychology syndrome.  When sugars or complex carbohydrates are eaten, the bad bacteria overgrowth produces alcohol as a by product of digesting the sugars.  There is no part of the body that will not suffer from a constant supply of alcohol, even in small amounts.

GAPS people develop a whole overgrowth of pathological flora in their bodies; I call them ‘bad guys’.  One of the bad guys is Candida. Candida + sugars = alcohol. Scary.

Opiates are drugs like opium, morphine and heroin. Gluten is a protein. Casein is a milk protein. When GAPS people cannot digest gluten and casein they turn into substances with the same chemical structures as opiates. Those opiate like substances go right into the system of people with this syndrome causing many of the psychological disturbances we see.  Even scarier.

These gut-brain toxic connections are just a couple of examples of what is going on with people who have many of the psychological problems we are talking about.

So here is what the GAPS diet does; It restores  balance to the digestive and elimination systems to function correctly. When a good balance is reached, symptoms disappear. So beautifully simple. Yes, Diet can cure.

Are You Getting Enough Sleep?

We live in a culture that strongly values productivity and activity above all else.   We have lost the value for rest and relaxation and we have forgotten how to do it!  Everyone needs a good 7-8 hours sleep each night.

 

Watching TV, browsing the Internet or playing with some type of electronic device, is not really very restful and yet this is how many people think they are “unwinding”.

 

Insomnia has reached epidemic proportions.  It is estimated to be the #1 health-related problem in America. 43% of adults report that daytime sleepiness interferes with their normal daytime activities. Hence, the success of Starbucks and Dunkin’ Donuts.

 

A full nights sleep:

  • Enhances memory and mental clarity
  • Improves athletic performance
  • Boosts mood and overall energy
  • Improves immune function
  • Increases stress tolerance

 

Fewer than 6 hours sleep is associated with:

  • Depression and anxiety
  • Impaired immune system
  • Overweight and obesity (you snooze, you lose …weight, of course)
  • Cognitive decline
  • Mood and mental health decline
  • Systemic inflammation
  • Increased risk of death

 

There is really no physical or mental condition that lack of sleep doesn’t contribute to or make worse.

The two biggest health challenges we face today are lack of sleep and stress.  You could eat a perfect diet and exercise ‘til the cows come home, but if you are not sleeping well and managing your stress, all bets are off!

 

So how do we make it better?  Think about life before electricity. People’s circadian rhythms were working well.  A lot of day light exposure, darkness at night. Lack of day light and lots of artificial light have disrupted that tremendously.

This disrupts our sleep as well as our body’s repair and melatonin production.

 

Follow these tips to avoid artificial light exposure:

  • Don’t use a computer for 2 hours before going to bed.
  • Use blackout shades to make you bedroom pitch black.
  • Cover your digital alarm clock or get an analog clock.
  • Turn off all digital devices that glow or give off any type of light.
  • If you can’t do these things for some reason, use a sleep mask.

 

Don’t eat too close to bedtime. However, if you are hypoglycemic you will probably do better with a snack before bed.

 

The very best advice I can give you is go to bed earlier!  Having a lot of energy late into the night is a sign of a disrupted circadian rhythm.  For millions of years human sleep patterns remained in sync with the daily variation of light exposure.  We rose with the sun and went to bed soon after sundown. This is what our bodies are adapted for.

 

The most important factor in getting a good night’s sleep is managing stress during the day.  High cortisol at night disturbs sleep. What I would highly recommend are good yoga-type breathing and movement exercises that promote daytime relaxation and a good nights sleep.

6 Surefire Ways to Beat the ‘Boring Diet Blues’

Are you sick of bland foods, exercising until you want to faint, and feeling stressed every time you step on the scale? So read on, I say!!

1)   The first surefire way to beat the ‘boring diet blues’ is to STOP DIETING! Diets don’t work! Lifestyle changes work. Try focusing on Health instead of weight loss.

Drinking more water, incorporating movement, getting adequate sleep, and focusing on pleasure and fun are key components to a healthy lifestyle.

2)   Start ‘moving’ and stop ‘exercising’.  If you don’t enjoy it, don’t do it! I don’t allow my clients to do the treadmill or elliptical trainer, unless they are groovin’ to some music and find it totally enjoyable. I have them play sports that they love, dance, or walk and bike ride to a destination.

If you do exercise that you don’t enjoy, you are stressing. That is elevating your cortisol levels, which triggers insulin. Insulin signals your body to store fat!!!

Only do the kind of movement you love!

One of my clients took my advice and signed up for ballroom dance lessons with her husband! The hour goes by and all she did was “have fun”!  Jane Fonda keeps in shape by doing just that! She dances with her boyfriend for an hour or more each evening.

3)   Eat ‘delicious’.  I have not met one person, young or old who doesn’t know what healthy food is.  But, one thing is for sure. It doesn’t have to be boring or bland. With a bit of effort you can whip up a really delicious and satisfying meal that is nutritious and healthy. Check out the crazy good recipes on my website.

Eat delicious food with appreciation, slowly.  Stop when you are not hungry anymore.

4)   Live life to the fullest every day.  Don’t wait until you are the weight you think you should be.  Have fun NOW!  Get dressed, look gorgeous, SHINE!

That takes the ‘bore’ out of boring, huh?

5)   Help others, yup, you heard me right.  When we take the focus off of ourselves and put it on others, something shifts inside. That will smash those ‘boring diet blues’, bam!

We need self-love and self-care, for sure. We never want to help others at our own expense, but having said that, there is no better gift we can give ourselves then helping someone else.

Now is the time more than ever to help those in need, after hurricane Sandy.  Get on it!

 6)   Last but not least, eat with the intention to support your highest potential and deepest purpose for the life you’ve been given.  That elevates ‘eating’ to a whole new level.  Not boring!

 

 

 

 

 

 

Arsenic in Rice?!

 

 

There’s been a lot of talk lately about arsenic in rice!  Oh, of course! The gluten-free wonder!

Is nothing sacred?  Recently Consumer Reports Magazine released their analysis

of arsenic levels in rice products including;

  •  white rice
  •  brown rice
  •  organic baby rice cereal
  •  rice breakfast cereals

which were all found to contain arsenic.

Arsenic can be harmful to a child’s developing brain and is a potent known carcinogen.

 

The study found arsenic levels in the blood directly increase with greater rice consumption. Many products tested had more arsenic in each serving than the 5 parts per billion (ppb) limit for adults set by the EPA as safe.

 

So many rice products are marketed to children and infants as health food. Kids are very susceptible to the dangerous impacts of arsenic exposure.

It is associated with neurobehavioral problems as well as cancer and lung disease.

This means parents should be especially careful to avoid serving their kids food with a lot of arsenic.

 

Even though we should not serve rice and rice products to pregnant women and children, for an adult a few servings a week of white rice (which was found to have much lower arsenic levels than brown rice) would probably not be an issue.

 

If you choose to purchase white rice, buy a brand from California like Lundburg

(their white Basmati Rice has well below the safe limit of arsenic).

Also, rinsing the rice before cooking and boiling it in a high water to rice ratio can help to reduce the arsenic content.

 

Brown Rice is NOT a Health food!

 

Brown rice and brown rice products should be avoided. Avoid;

  •  brown rice syrup
  •  brown rice pasta
  •  rice cakes
  •  brown rice crisps

 

In my opinion, aside from arsenic, brown rice is not the health food it has been said to be.

 

  • It has phytates that are hard to digest and are anti-nutrients.
  • These phytates reduce the bioavailability of vitamins and minerals present.
  • Brown rice also reduces dietary protein and fat digestibility compared to white rice.

 

Having said all that, no food is completely safe or without some level of contamination risk.  So while rice may contribute an unsafe level of arsenic, we need to be cautious about demonizing an entire class of food.  While I don’t think rice is an essential part of a healthy diet, I do think it can be eaten occasionally, if we pay attention to the brand and method of preparation.

The Truth About Toxic Mercury in Fish

Hey, guess what I found out.  Most people do not eat enough cold-water, fatty fish, and this is especially true of pregnant women.  Everybody is worried about mercury toxicity.  I was.

Believe it or not these worries are not supported by science the majority of the time.  In fact, it is much safer to eat fish than it is not to eat it!

DHA is a crucial nutrient for the development of the brain and the nervous system and is derived from eating, you guessed it, fish!

Eating plant sources of omega-3 like flax and walnuts doesn’t cut it. Only a very small percentage of the short chain omega-3 fats found in plants (1%) gets converted into the beneficial long-chain omega-3 fat DHA.

How Does Mercury Cause Problems?

You see, mercury binds with selenium and causes a lack of selenium. Without selenium, vitamin C can’t perform its functions, and then oxidative damage (the cause of many serious diseases) is  going to happen fast and furiously!

What I want you to understand is that the ratio of mercury to selenium is the key to the problem. Our soil, here in the U.S. is rich in selenium, this is a very important component. In other countries where selenium is poorly available, mercury exposure is much more dangerous.

Most ocean fish and even most fresh water fish have plenty of selenium, much more selenium than mercury averaging 20:1 (except whale and shark meat which contain an excess of mercury).

Mercury is the only thing we know of that can kill selenoenzymes. (enzymes made from selenium)

Bottom line: As long as you have more selenium than mercury you are in good shape.

Studies have shown that the benefits of eating ocean fish during pregnancy amount to as much as 5 IQ points to the developing fetus!

So the more ocean fish moms eat during pregnancy the more selenium, omega-3 fatty acids and vitamin D are taken in.  They are known to be hugely important for developing healthy brains as well as contributing to the mother’s health during and post pregnancy.

Eating more fish is actually good advice for women. Too many people have misconceptions. People need to know ocean fish need to be eaten in greater amounts! Dr. Ralston recommends eating fish 2 to 3 times per week.

Dr. Nicholas Ralston is a research scientist at the University of North Dakota Energy and Environmental Research Center, EERC, involved in evaluating potential human health effects and risks resulting from environmental exposure to air toxics.  He received his PhD in biomedical research biochemistry from Mayo Medical Center and his bachelor’s of science in biology from Mayville State University.  Dr. Ralston’s principal areas of expertise include the biochemistry and analytical approaches to quantitative assessment of immune research and inflammation at the molecular and cellular level.  His primary interests are in trace element physiology and the pathophysiology of toxic trace element exposures as well as prevention, protection, and remediation strategies.  His current research interests include examinations of the molecular mechanism of methylmercury toxicity, selenium-dependent biochemical processes involved in preventing the neurotoxic effects of mercury, mechanisms of pulmonary particulate pathologies, mercury phytoremediation, and other means of diminishing bioaccumulation of mercury in fish.

Prior to his position at the EERC, Dr. Ralston worked at Grand Forks Human Nutrition Research Center and Bowman Gray Medical School at Wake Forest University.  He has authored or coauthored over 50 professional publications, research articles, and book chapters and given numerous invited presentations on health issues related to methylmercury-dependent inhibition of brain selenoenzymes and beneficial effects of maternal seafood consumption on child development outcomes.

Losing Weight: 4 Things That Work and 4 things that don’t

First let’s look at what doesn’t work:

1)   Dieting for many years.

We have all heard that the definition of insanity is doing the same thing over and over and expecting a different result.

If any strategy continues to fail, then it is time to step on it, kill it, and throw it out with the trash!

The long term practice of dieting is oxymoronic. It is unscientific. Lifestyle pattern changes, and thought pattern changes are really the only things that work.

 

2)   Artificial sweeteners.

Its been 50 years since artificial sweeteners entered the food chain.  Not a single peer reviewed scientific study has shown any correlation between the use of such nasty tasting stuff and long term weight loss.

In fact research shows that artificial sweeteners increase appetite and cause us to gain weight.  Wooops!! So I will again repeat my favorite mantra

EAT REAL FOOD”.

 

3)   Thinking you are fat when you’re really not.

Have you ever met someone who is clearly slender but spends a lot of inner dialogue and life energy thinking that she’s fat and needs to lose a pound or 3 or 10?

My prescription is this; Don’t think you are fat if you are not. Just think that you are silly and you need a big hug and lots more love, that is more factually correct.

 

4)   Not fully living life.

A significant number of those who are trying to lose weight have a very interesting strategy- they take themselves out of the game, stay on the sidelines of life.

They have made the well thought out choice that if I can’t be at the weight I want, then I can’t possibly be the real me, which means my life hasn’t started yet.  Ouch!!

If this describes you, then the truth is, the sandbox isn’t as much fun without you!

If you are using weight as an excuse to hold back from life, I’ll bet you are not as happy as you could be.

But no need to worry, now’s your time to start living no matter what you weigh.

Can you hear all the fans cheering your arrival?

 

 Strategies That Work for Weight-loss.

 

1)   Eating

Oddly enough, one of the best ways to achieve long-term sustainable weight-loss is to eat.  When I say “eat”, I mean creating for yourself a relationship with food that has us loving food, feeling nourished by it, receiving pleasure from it, celebrating it, and eating with a hearty celebration for life. Eat.  Trust you body.

Indulge in your biological, God-given imperative to add nutrition to your every cell via the tasty vehicle of food.  By being willing to find your natural appetite and your inner nutritionist, your body will begin to find its way to the best you.

It is that simple.

 

2)   Show your body love and appreciation

Many people feel they cannot love their body as it is.  They live in constant self-criticism.  Sometimes we cannot do things alone.

The body needs to be loved, but not exclusively by the one who inhabits it. So if you just can’t seem to love your body as it is, try to find someone who can and see what happens.

 

3) Support the skinny people.

I’ve noticed that some women can get pretty competitive with each other when it comes to body weight. They look at each other, compare, criticize, silently attack, and seem to go against the very people that they want to emulate.

For sure, this is simply part of human nature. But at the same time, we’re here to grow and evolve and raise the bar in how we relate with all our fellow creatures.

So not only is it a cheap shot when we unfairly judge fat people, it’s equally unfair to judge the skinny ones. Were all trying our best, so in general, the judgment thing tends to fall flat when it comes to getting us what we want.

The next time you see someone who has the body or the weight that you want, send them a silent blessing. What goes around comes around.

4)    Do some spiritual muscle building.

Not actual muscle building. For far too many people dieting and weight loss can become it’s own full time religion.  We can spend too much of our life energy worshipping the perfect body.

Strengthen your spiritual muscles.  Talk to God, inquire about the grander plans that may be in store for you.  It might just be that as we express our true purpose and our destiny emerges, the body we’re meant to have will finally have the freedom to reveal itself.

 

 

 

Joy’s Best Home Remedies

What do we do when our prevention efforts fail and we or our kids get sick? We thank God that our immune systems are going to get a boost and our bodies are detoxing! That’s what.

 

What are the colds, stomach aches, fevers, and viruses really all about?  It is your body cleaning house and takin’ out the garbage. It’s a good thing, really. The less you put in the less needs to come out.

 

We also want to pull out an arsenal of home remedies to help heal us and move things along.  So here are some of my best home remedies for our most common illnesses. Print them out and keep them somewhere safe so you can take a look when things get tough.

 

For colds;

  • Use a good cool air humidifier. (check out the ones I have on “shop”)
  • Have a lot of hot drinks and soups.
  • Use saline spray for stuffy noses.
  • Make a tea with a few slices of lotus root to dry up mucous and quiet coughs. It is good for all respiratory problems

Ginger

For coughs and sore throats;

  • Do the same as for colds but use ginger compresses on throat and chest.
  • Gargle with warm water and sea salt.

 

For ear infections;

  • A drop of warm olive oil in the ear is very soothing.
  • According to Chinese medicine an ear infection is caused by a stagnation in the kidneys, do a ginger compress on the kidney (same side as infection).

 

For stomach ache, nausea or vomiting;

  • The most soothing thing is a hot water bottle. (I have great ones on my amazon store, just click on “shop”)
  • Always have umeboshi plums (on my website “shop”) on hand. They’re
    instant relief for nausea and stomach aches (some headaches too).
  • Chamomile tea and ginger tea work well.
  • For constipation I always recommend the old time favorites like prunes, prune juice, probiotics, and lots of water.  Hot water and lemon first thing in the morning helps. I also recommend sitting in a squat position with knees up and stomach/colon massages are very effective.
  • If all else fails an old fashioned enema bag works wonders (you can find that as well here on my website “shop”).

For fever:

Most of the time it is good to let the fever run its course. However a fever over 103 in adults and over 102 in children are cause for concern. Consult your health-care advisor if natural methods do not work or if a fever lasts longer than 2 days.

**Call your healthcare advisor immediately for a child under three months of age who has a fever of 100.6 rectal or more, a child three to six months old who has a fever over 101 F rectal.  Call immediately if your child has suffered a seizure from the fever or if a feverish child shows a rash.**

 

  • Apply a tofu plaster on the forehead, changing it every hour.
  • Dissolve 1 tsp of kuzu (white starchy powder, you can find in your health food store)  in 1 cup of apple juice over a low flame. Drink to help bring down a fever.
  • If you can, purchase a far infrared blanket (made of ceramic fibers). If you wrap someone with a fever in it, the fever will come down quickly.
  • A warm bath is an old favorite (never cold!!). It will immediately bring down fever.
  • Drink 1 tbsp. raspberry jam dissolved in a cup of hot water with a splash of lemon juice and sit under warm blanket. This will induce sweating and bring down the fever.

 

 

One of the best home remedies I know, and used on my own children is Palm-Healing, also known as comforting. You rub your hands together hard, until you feel them tingly and electrified. Then put the child on your lap and calmly breath with the child while placing your hands on the effected area:

 

  • For tummy ache- on the tummy.
  • For ear ache-place one hand over the ear, the other on the kidney.
  • For a chest cough- place the hands on the chest and throat.

 

Trust me, this is a powerful healing tool and it works like a charm. If nothing else your child will feel very loved , protected, and cared for. Awww!!

Coconut Oil, the New Windex

 

I am so compelled to write about coconut oil because my clients are coming back to me with absolute miraculous results!

“ OMG, Joy! I can’t believe it worked when the steroid cream didn’t!”

“I have so much energy and I am losing weight!”

“My baby’s rash just disappeared!!”

“I am thinking so much clearer these days.”

 

Did you see “My Big Fat Greek Wedding”?  The father used Windex on everything! Sprayed it all over his body, hysterical.   Coconut oil is my Windex.

 

I will tell you what it is good for, but first  let me tell you why. Coconut oil is anti-bacterial, anti–viral, and anti-fungal. It is full of antioxidants and Lauric acid (a medium chain fatty acid, known to destroy lipid coated viruses like HIV, herpes, influenza and many more).
