Homemade Mayonnaise

  • 2 eggs
  • 2 tsp fresh lemon juice
  • 1 tsp dry mustard powder
  • 1 1/2 tbsp apple cider vinegar
  • 4 drops liquid stevia
  • salt and pepper to taste
  • 3/4 cup extra virgin olive oil
  • 1/2 cup liquified Tropical Traditions expeller pressed Coconut Oil

-combine all ingredients except oils, in Vita-Mix or blender.

-when fully combined add oils, pouring slowly through the hole in the blender cover with machine running.

-keep blending on high until you see a white, thick mayonnaise.

– Easy, delicious and so much fun to make!

 

Snack, Anyone?

What should we give our kids for school snacks?

The questions we have to ask ourselves are;

How do we keep our children’s blood sugar level so they are not bouncing off the walls and then falling asleep in class?

How do we give them the maximum nutrition to keep their brains functioning all day?

What do our kids need in between meals to maintain focus and concentration?

 

The answers to these questions are one and the same. They need a good source of protein, a quality source of fat, and either a fruit or vegetable source for energy.

 

If  your children are young, you can probably get away with a small avocado salad with cucumbers and tomatoes and a hard boiled egg.  Older kids may feel self conscious and would do better with one of my apple zucchini (grain-free) muffins.

 

One important point I want to make is that grains play havoc with blood sugar.  I would recommend leaving all grain products out of the equation.  The best snack would be a grain free one.  Another important point is that a snack should be a small meal not a treat. A treat should be something to have on occasion. So here we go:

 

 

-An apple and a tbsp. of raw almond butter

– a slice of banana paleo bread

-a grain-free apple zucchini muffin

– a small salad with chicken or fish strips or sliced egg, avocado and yummy dressing

– a small collard green wrap with tuna, egg or chicken, avocado and sprouts

– you can use a cabbage leaf or lettuce leaves for the above wrap

-chicken ,turkey or beef sliders, good quality ketchup, some black pitted olives and cut veggies

-Kefir with cut apples, pears, berries or melon, topped with grain-free granola

-zucchini pancakes

-apple sauce with slivered almonds and shredded coconut

-raw coconut wraps with nut butter and sliced bananas.

-fruit salad with walnuts and shredded coconut

-guacamole with grated egg and carrots and peppers to dip

-mixed berries with toasted coconut flakes and nuts

-Egg salad or chicken salad in a bell pepper

-roasted chicken gourmettes and sliced vegetables

-whole Kirby cucumber seeded and then stuffed with tuna or egg salad

-spinach strawberry and walnut salad with raspberry vinaigrette

guilt-free pizza bites with pizza sauce dip.

– organic apple chips or zucchini chips or sweet potato fries can be added to the snacks above.

Big FAT Lie #1 (big lie about fat)

The entire campaign against the use of saturated fats began in the 1950’s when a

Doctor named Ancel Keys distorted his studies to show that countries with higher

Saturated fat consumption had higher rates of heart disease.

 ( See video.)

So people got scared of using traditional saturated fats like butter, coconut oil, meats, and  tallow and started using cheaper polyunsaturated fats like soybean oil, corn oil, safflower oil, and  canola oil.

So for the past 60 years, we’ve all been shakin’ in our boots over FAT!  Fat-free this, fat-free that.

Our Brains are made up of Fat! How can they work properly without fats in our diet?  Saturated fats compose 50% of our cell membranes!

And guess which fats end up being the healthiest? The ones we have been eating for thousands of years!! Yes sir, saturated fats are the best, coconut oil, butter, and saturated animal fat. Oh yea, and some old fashioned extra virgin olive oil on cold salads.

But don’t take my word for it, change your oil!! Do it for one month and see what happens, you will be amazed! I have been seeing crazy results for things like depression, hypothyroidism, arthritis, diabetes, memory loss, alzheimers disease, acne etc.  Let me know how it works for you!   Bet you will never change back!

One of my clients told me people are telling her she glows! She is diggin’ the butter!

Just a few little tips:       -Use only organic cultured butter.

– Use Tropical Traditions coconut oil- it’s the best!

– Use only extra virgin olive oil, organic if you can.

–  Never heat olive oil.

–  Avocados and olives are fine.

 

Zucchini Pasta with Pesto

A year after discovering my zucchini spaghetti machine, I am still making that yummy dish. I’ve been trying so many variations.

My latest is with pesto. Mmmmm, so tasty.
– make 8 zucchini squashes into spaghetti, with the speghetti- maker.see my “zucchini spaghetti”
post.
-put the zucchini into a pot, drizzle 2 tbsp of liquified coconut oil, 1 tsp salt , and steam covered for about 15 minutes, stirring frequently until soft and spaghetti-like.
-Drain excess water, pour into a large bowl, mix with pesto
-Garnish with fresh organic cherry tomatoes, and a sprinkle of parmesan cheese.
-Enjoy!

Shocking News About Veganism

Could the so-called healthiest diet in the world actually make you SICK and FAT?!

I happen to love the whole moral argument and I mean LOVE!  YUP you heard me right.  I loved my whole grains, my Ezekiel bread and my brown rice pasta. Uh Huh. Who wants to eat animals? Pffff.

However, I’ve recently proven to myself  (remember I am a human science project) that veganism is not best for me…at all!

But never mind me, I have heard that certain celebs i.e. Ginnifer Goodwin and Megan Fox , recently defected and (presumably) went back to some meat eatin’.

Now really which Ginnifer looks better? Top is when she was vegan, bottom was when she started eating meat again……….just kidding!! But it very well could be ;).

So I’ve been asking around, to some of my fellow Health Coaches to see what they think. The word around town is PALEO baby, thats right . Some meat, eggs, fish, vegetables, good fats and fruit.The finest quality you can find, organic and fresh.

Most people do great for a while on a vegan diet. 6 months to a year and then it all starts breaking down. Mineral deficiency, low energy, inflammation and what happened to me…dum dum dum…hypothyroidism.

In my quest to heal my body of this hypo-craziness I have uncovered my truth. Soy, grains, beans and legumes as well as polyunsaturated oils do not support good health.

I know its not politically correct, and its not the popular way right now, but as people’s thyroids and bones crash down around them, they will have no choice but to change their tune.

Take a look at Dr. Terry Wahls who healed herself of debilitating Muscular Sclerosis by eating a hunter-gatherer diet. It’s truly amazing.

I was a vegan for 10 years before I completely fell apart. A macrobiotic consultant forced me back on animal protein, I was so weak and mineral deficient.

Years later I found out about phytic acid and soaking grains and beans. I figured I never did that correctly back in the day, and I could be vegan once again (see my post “soak soak soak your grains”) Wrong! As long as I was eating grains and beans, my weight and cholesterol levels could not be contained.

 

 

 

 

 

 

So I am grain-free and eating a hunter-gatherer diet.

For the first time in my life, my weight dropped and stayed down! Does. Not. Budge. Yay!

My blood-work looks awesome, my thyroid is actually healing, joints in my thumbs were inflamed and now look and feel so much better.

Stay tuned, I will give you the whole low down.  In the coming weeks we will explore all the problems with soy,  grains and other “vegan” foods and see what our healthiest options are.
