serves 9
* 1 medium zucchini, shredded (about 1 cup full)
* 1 apple, grated (about 1/2 cup)
* 1 cup almond butter
* 1/4 cup raw honey
* 2 organic eggs lightly beaten
* 2 tsps ground cinnamon
* 1 tsp vanilla extract
* 1/2 tsp nutmeg
* 1/2 tsp allspice
* 1/4 tsp ginger
* 1/2 tsp baking powder
*pinch of himalayan salt
-preheat oven to 350
-shred zucchini and squeeze out excess water
-shred apple
-mix well with all other ingredients
-put in muffin tray and bake 15-20 min or until toothpick comes out clean
-makes about 9 muffins

Awesome recipe!!! Made this twice on the wekeend, and every time it was a huge hit. Very simple to make, and the kids loved it even though it was loaded with Zucchini and all good things! It tasted great!
